I did pizza and burgers this week. Plan on doing meatloaf and maybe just the flat for a brisket this weekend. Pizza: Pizza was pretty good (a nice wood taste), but I might get the GMG pizza attachment. I am also pretty convinced that I need Grill Grates for the burgers. They are good, but I can’t get over the different texture. Lol

Oil, started prepping that brisket yet? I’m gonna go grab one this evening I think. Prob just gonna do the flat, like you were talking about. Looking for videos now, and am gonna swing by reasors later to see if they have one for sale.

The light on the Rec Tec appears to be really handy. I just took an old desk lamp and mounted it on my work table in my " cook shack " , otherwise known as covered patio. I'm anxious to fire up my Old Country Brazos. Saturdays were my cook days and CFB has greatly interfered with my smokin. Its really hard to watch football and tend the fire. I have not smoked anything since late August. I want to load it up with ribs and then T-Giving weekend, do a brisket.

They make no bones about it , they are an Austin/Franklin barbecue knock off. They are claiming Central Texas barbecue in OKC. They operated out of a food truck for the past year and a half. I never made it to try their cue , cuz it was in Midtown, and Mrs Hermit and I not comfortable in the downtown districts, we feel like we're on our daughters' turf since she lives in the Plaza district. But I'll have to try this when the grand opening crowds die down. I'd rather trip to Central Texas and get the real thing, then come back and see how they compare.

For a Cali guy, Harry Soo is pretty good. He competes and wins using WSMs. What he's doing is Cen Tex brisket except he adds celery seed to salt/pepper. And he finishes in the oven after wrapping, which is what I do if I wrap in foil. Butcher paper allows in a little bit of smoke, but foil wrap, man, it might as well be in the oven.

Thanks! I'll watch this at lunch. My kid has a Veterans Day ceremony at school today, so I am excited about that, and want to swing by the butcher afterwards. She also has straight A’s and today is the end of the first trimester, so we will be partying it up this weekend!! A great time for sweet meat treats!

I don't think there's any doubt, it CAN make the best barbecue. Doesn't always happen. Its not as consistent as a pellet cooker or other types.

I can't vouch for pizza, but barbecue can be fairly low calorie, as far entrees go. Its much better than fried. Its akin to baking.
But its the sides that get ya. Its hard to find good low cal sides to go with barbecue.
I've lost 20#'s since Sept 4 and been eatin a lot of barbecue. But then, I try to get in 15 to 20 miles a day on the bicycle, which is the larger factor.
I really miss the sausages from Wheeler Meat Market, they got this guy in Dallas making them and they are good, especially the jalapeno/cheddar cheese sausage, but the calories are HUGE.

I like messing with the fire as well. I have a firepit out back. The wife hates smoke (had a house that burned down), but I cant get enough of it. Anyway, so I bought a boneless Boston Butt to smoke. Its 2.5 lbs, so not large, but there are only three of us. I am pretty stoked about it. Im gonna inject it and throw it on tomorrow morning until a 205 internal. Then Ill go FTC for about 3-5 hours, and we'll pull it. Ill def get pics and post em up. Oh, I am doing a smoked bologna as well. Any recipes on either, feel free to shoot em over. I am doing Malcom's recipe off bbqright.com if I dont hear anything better. Looking forward to it! Also, the Veterans Assembly was awesome. Got lots of great video my kiddo will love when shes older!

Well BBQ isn't bad but when you start using a bunch of sauce and bread it goes south quickly. And pizza, especially if you are diabetic, is a carb and calorie nightmare.

Here's how I've smoked pork butt on the WSM , I do the " high heat " version Chris Lilly's Championship InjectionBut I'm goin to Butcher BBQ pork injection with their Honey Rub, on my next cook on the stick burner. I found out after I bought the pork injection, that Butcher uses their " Open Pit " injection in competition. Butcher BBQI think pork butt needs to be injected, its just too large a cut of meat.

Meat’s on!! That Butcher place looks awesome too! Also, I tested the thermometers in ice water and they were actually pretty accurate. So I don’t know what’s going on. Still gonna get the thermapen, but I must have hot spots in the grill or something, idk.
