Pulled it when the breasts hit 165°. Barely got a pic befor the wife and kid ripped off leg quarters and took off. I was perfectly happy with the breast. Good looking bird man! What’d you season it with? Did you pull back the skin to season or no? I don’t, but some folks say it helps, so I’m surveying around. I do like to brine over night in kosher salt and sugar, because that’s way easier than removing and reattaching the skin.

I do like to brine over night in kosher salt and sugar, because that’s way easier than removing and reattaching the skin. No brine. Only thing I do under the skin is shove a thick pad of butter down on each breast and thigh. A little olive oil on the skin, then a nice coating of Jackstack meat and poultry rub. Went about six and a half hours at 230°.

I'm amazed people will put something up for sale, and not go the trouble to clean it up. This Old Country Pecos or Wrangler II , looks filthy. If it can be cleaned up , this is probably not a bad deal, cept I would offer $150 or less. The Pecos is very near my smoker, except it has 1/8" steel walls and my Brazos has 1/4" steel. My Brazos sells new for $1,000. If ya thinkin about a stick burner, this is the best way to buy one. This is a Cheap Offset Smoker ( COS ). People buy them new, find out how much trouble it is to maintain temps, and they sell them quickly. A person could buy this for less than half price of new, find out if a stick burner is for them, or not. And then easily sell it for what ya paid for it. Basically, a no cost experiment.

You guys know how much I love Yoders, so I would have absolutely driven down there and bought it, but it looked like shit in the pics. This thing is a tank, looks indestructible when new. Yoder even sells paint to fix them back up after time/wear and tear. Why did he refuse to do that? Idk. Maybe he sold it anyway, but a little effort goes a long way when you’re selling a higher dollar item.

The more I look at the one in the pic, I think its the Old Country Wrangler II. It would have 24" barrel but shorter in length, like 26" , than a Pecos or the Brazos that's 36" length with a 20" barrel.
I looked at the Wrangler really close, the Wrangler I has 3/16" steel and sells for about $500. Then they quit making it, and sell a Wrangler II for $400 that has 1/8" steel.
But that thing in the pic is a mess, looks like bird shit all over it. Not real appetizing . And they should provide more pics, can't do enough pics.

Have some pulled pork in the freezer from a few weeks ago. Going to pull it out for some chili this weekend.
A 640 for 800 bucks is a hell of a deal, as long as it is in working order. I could easily deal with some cosmetic work for that price. I paid 1700 for my 480 New in 2013. Also got the extra shelf, grill grates, probe port and cover. But that is still a hell of a price for a 640.

I was concerned the electronics might be damaged by moisture, and since it would be my first one, I passed. Good chance I’ll buy one once the warranty runs out on mine though. I love em, and should’ve got one when I purchased, but it’s spilled milk now.

Should be good food, and we can see how good this smoker holds temps in some seriously cold and windy conditions (by Oklahoma standards). Def took a while to heat up. No surprises there. But can it hold close tolerances on temps?

But can it hold close tolerances on temps? I have a buddy that has a Traeger. When he smokes in cold weather he has a moving blanket that he throws over the top of the smoker.

I've smoked in those temps with snow on the ground using my WSM. Never had a problem, probably just used more fuel. I missed a day yesterday when I could've ran the stick burner. I was cautious about the timing of the cold front. So Mrs Hermit and I went to Maples Barbecue, OKC's knock off of central Texas barbecue. It was really good. The brisket is all that, if brisket in Austin is better than this, then I gotta make a trip. Its salt/pepper rub smoked with oak. We went at lunch, caught the end of the lunch crowd and felt lucky to find a seat at a table. Ribs are peppered , got some heat to them. The sausage was good, more like a hot link , appears to have jalapeno and cheese inside. I enjoyed all the meats, the sides were average. And looking at the Yoder 640, I found out yesterday that the Production Manager for the old Oklahoma Joes Smokers, before the owner Joe Davidson sold out to Charbroil in 1998, went to work for Yoder in 2007. That's why Yoder offset stick burners look so much like Horizon.
Joe Davidson's brother Roger, started Horizon in 2003. About the time Joe went to KC to start Oklahoma Joes restaurant.
